Sopas Spaghetti

Your kids will definetly love this milky chicken soup. Perfect to serve on a rainy day, when your ill or just serve for the whole family to enjoy!

Ingredients

  • 100 grams chicken breast fillet, cut into strips
  • 2 pc (99 g) hotdog, slliced
  • 1 pc (30 g) small onion, sliced
  • 50 grams carrot, cubed
  • 1/3 cup (85 g) evaporated milk
  • 1 tsp (7 g) salt
  • 1/8 tsp (.375 g) pepper
  • 1 pouch (250 g)DEL MONTE Carbonara Sauce
  • 1 pack (175 g) DEL MONTE Spaghetti (Merienda Pack)

Instructions

  1. Saute in 1 tsp oil onion, chicken and carrot for 5 minutes. Add and saute the hotdogs and set aside.
  2. Cook the pasta according to its package, drain and reserve 2-1/4 cups pasta broth.
  3. Combine the chicken mixture with the pasta broth and DEL MONTE Carbonara Sauce. Let it simmer.
  4. Then add the spaghetti noodles, salt and pepper. Cover and let it simmer for 5 minutes.

Quick Chicken Noodle Soup

This dish is a comfort food suitable for any time of the year especially during cold months and when you are sick.

  • 2 cups water
  • 2 -3 celery ribs
  • 1/4-1/2 teaspoon salt
  • 1 cup baby carrots
  • 2 (32 ounce) boxes low sodium chicken broth
  • 1/4-1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4-1/2 teaspoon garlic powder
  • 12 ounces 100% whole grain wide egg noodles
  • 2 (10 ounce) cans boneless skinless chicken breasts, drained

Instructions

  1. In a food processor, dice the celery & carrots until finely chopped.
  2. Spray a large pot with cooking spray then turn the heat over medium low heat. Add and saute for 5 minutes the vegetables and chicken.
  3. Pour into spices the broth & water next stir. Boil and cook for about 5 minutes.
  4. Stir in the noodles then cook for 5-7 minutes until done and serve.

Curried Chicken Salad

Turn your leftover chicken into fresh and delicious saladsĀ  with grapes that will surely become a favorite.

  • Lettuce
  • 2 cups chopped leftover chicken
  • 1 cup plain fat-free yogurt or milk kefir
  • 1/2 cup grapes, halved, or 1/4 cup raisins
  • 2 teaspoons curry powder
  • Dash of salt
  • 1/4 cup walnuts (optional)

Instructions

  1. Mix into a bowl yogurt with grapes, curry powder, walnut (optional)and a dash of salt.
  2. Chop the lettuce and place it to each 4 bowls. Combine the chicken with the yogurt mixture, and pour on top of the beds of lettuce.
  3. Chill or serve immediately.

Chicken Enchiladas

A delicous meal for everyone to share. A perfect way to use some chicken leaftover.

  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 cup chopped green onions
  • 1 (4 ounce) can diced green chiles
  • 1 tablespoon butter
  • 1/2 cup sour cream
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup shredded Cheddar cheese, divided
  • 6 (12 inch) flour tortillas
  • 1 1/2 cups cubed cooked chicken breast meat

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a large baking dish.
  2. Melt the butter In a medium saucepan over medium heat and saute the green onion for about about 3 to 4 minutes until tender.
  3. Add then stir the garlic powder, green chiles cream of mushroom soup and sour cream. Mix well. Reserve 3/4 of this sauce and set aside.
  4. Pour the remaining 1/4 of the sauce into the saucepan then add the chicken and 1/2 cup of shredded cheddar cheese. Stir together.
  5. Fill each tortilla with the chicken mixture and roll them up. Place seam side down in the prepared baking dish.
  6. Combine in a small bowl the reserved 3/4 of the sauce with the milk. Scoop this mixture over the rolled tortillas,top with the remaining cup of shredded Cheddar cheese.
  7. Bake in the preheated oven until cheese is bubbly or for about 30 to 35 minutes. Serve!
