Bacon and Egg Macaroni Salad

This salad is quick and easy to put together it can be made a day ahead. A great dish to serve on any occasion!

Bacon and Egg Macaroni SaladIngredients

  • 3/4 teaspoon black pepper
  • 1/2 cup finely chopped red onion
  • 1 cup chopped celery
  • 1 pound elbow macaroni
  • 1/2 pound bacon, cooked and crumbled
  • 2 cups mayonnaise
  • 8 hard-boiled eggs, chopped
  • 1 teaspoon salt

Instructions

  1. Cook macaroni In a large pot of boiling water over high heat 7 to 9 minutes, or just until tender. Drain, rinse, and allow to cool.
  2. In a large bowl, place the macaroni and add remaining ingredients, and mix well. Cover and refrigerate for at least 1 hour before serving.

For those who want’s a healthy food out there. Try making this fluffy pancakes made with kefir!

Kefir Pancakes with Blue Berry Syrup

Ingredients

  • 1 teaspoon of soda
  • 2 large eggs
  • 2 cups of milk kefir
  • 1 3/4 cup of flour
  • 3/4 teaspoon of salt
  • 2 teaspoons of sugar
  • 1 1/2 teaspoon of baking powder

Instructions

  1. Mix together first the dry ingredients.
  2. Blend or stir the eggs with the kefir until it is moistened.
  3. Cook it on a griddle at and serve.

Don’t just eat your kefir pancake with no attraction! You may want to try adding some yummy syrup such as corn, strawberry or even chocolate! My all time favorite is to add really blueberry in it! Enjoy!
