Walnut Yogurt-Kefir Parfait

This parfait recipe is healthy, easy to follow and it’s ideal for delicious grab and go breakfast. walnut parfait

Ingredients

  • 2 cups nonfat yogurt or milk kefir
  • 1 tablespoon honey
  • 1 cup fresh fruit (berries, kiwi, oranges)
  • 1/2 cup chopped, toasted walnuts

Instructions

  1. Divide between two glasses the yogurt or milk kefir, fruit, and walnuts. Then pour each glass with 1/2 tablespoon honey.

Curried Chicken Salad

Turn your leftover chicken into fresh and delicious saladsĀ  with grapes that will surely become a favorite.

  • Lettuce
  • 2 cups chopped leftover chicken
  • 1 cup plain fat-free yogurt or milk kefir
  • 1/2 cup grapes, halved, or 1/4 cup raisins
  • 2 teaspoons curry powder
  • Dash of salt
  • 1/4 cup walnuts (optional)

Instructions

  1. Mix into a bowl yogurt with grapes, curry powder, walnut (optional)and a dash of salt.
  2. Chop the lettuce and place it to each 4 bowls. Combine the chicken with the yogurt mixture, and pour on top of the beds of lettuce.
  3. Chill or serve immediately.
